Simple is the name of the game with this salad. It is so versatile and easy to make it to your liking. Don’t have all these ingredients for the salad, no problem! Switch out the radishes, cucumber, and carrots for any other vegetables you have available. The fresh dill helps to highlight the delicious flavor of the honey mustard dressing.
Honey Mustard Dressing: Wondering how this dressing is so creamy without any dairy? Use a blender! I used the smoothie cup attachment. A whisk will do, as well. If using a whisk, combine all the ingredients BUT the oil. As you whisk slowly pour in the oil to create a light and creamy dressing. This will definitely be a great arm workout. You may also be skeptical of the curry powder. I promise you won’t taste it. The curry powder gives the dressing a golden hue. Feel free to double the recipe so that you have enough for the whole week!

1/4 cup olive oil
2 tbsp apple cider vinegar
2 tbsp red wine vinegar
1.5 tbsp dijon mustard
1 tbsp honey
1/2 tsp curry powder
1/2 tsp garlic powder
Cracked black pepper to taste
1/2 Red leaf lettuce
1/2 Romaine lettuce
3 radishes, sliced
1 scallion, sliced
3 tbsp chopped dill (with stems)
Pour all the salad dressing ingredients into a blender. Blend for 1 minute until creamy.
Assemble the salad into a serving bowl. Roughly chop all the lettuce. Peel the carrot into ribbons. Slice the cucumber and radishes into half-moon shapes. Slice the scallions, sprinkle on top. Roughly chop the dill and sprinkle over the top of the salad.
