I don’t know about you, but every time I step foot into the grocery store I tingle with excitement. The produce section is so colorful and the variety is abundant, I sometimes get carried away. This time, I definitely got carried away. The cucumbers were looking extra fab. I thought to myself, how about some cucumber slices to snack on for the week. In the moment I was jazzy by the idea. Cucumbers are satisfying, filling, and have a great crunch. I thought I would dip them in hummus and have a refreshing snack for the week.
Well let me tell you…those cucumbers just sat, and sat, and sat in my refrigerator, not going anywhere fast. So I thought to myself, “how can I make these cucumbers more exciting and appealing to have as a snack during the week?” QUICK PIC! Also known as, quick pickling.
Do you ever get excited by the idea of eating “healthy” and then it comes to be the time to slice up those veggies for snacks and you are just like, “I rather not”?
Next time think: How can you make those snacks more exciting?
- Does it need more flavor? Add spices
- Does it need a little crunch? Add nuts or seeds
- Is it a little dry? Make a refreshing dip
Eating “healthy” doesn’t have to be boring. Try out this spicy quick pickled cucumber to make veggies more exciting and refreshing! Between the nuttiness from the sesame oil, the zing from the vinegar, and subtle heat from the red pepper flakes, you will definitely be satisfied by this snack.

1 English cucumber, sliced into half-moons
1/4 cup white vinegar
1/2 tsp salt
1/2 red pepper flakes
1 tsp honey
1 tsp sesame oil
Slice the cucumber and place into a medium-size bowl. Then mix in the vinegar, salt, red pepper flakes, and sesame oil in with the cucumbers.
Instead of red pepper flakes, you can always use Aleppo pepper or Japanese seven spice (my favorite).
