Super Seedy Cherry Chocolate Granola

What is yogurt without a little crunch? This super seedy granola will have you dancing while enjoying your favorite yogurt parfait. Granola, yogurt, and fruit is probably one of my most favorite snack or breakfast meal. Sweet, creamy, and crunchy, what more could you want? The best part of this granola is that it is 1) nut-free, 2) has dried cherries and dark chocolate chips, and 3) it is loaded with healthy fats and fiber from the super seeds!

Ingredients

1 1/2 cups rolled oats

2 cups sunflower seeds

2 cups pumpkin seeds

1 cup toasted coconut flakes

2 tbsp chia seeds

2 tbsp hemp seeds

2 tbsp ground flaxseeds

1/2 tsp ground cinnamon

1/4 tsp salt

1 tsp vanilla

2 tbsp coconut oil

1/2 cup honey

1/4 cup chocolate chips

1/4 cup dried cherries

Instructions

Step 1:

Preheat the oven to 325 degrees and place parchment paper on a baking sheet. In a large bowl, mix together all the seeds, cinnamon, and salt

Step 2:

Pour the coconut oil and honey into a small pot. Simmer on medium for 5 minutes. After the honey has simmered, mix in the vanilla and pour over the granola mixture. Mix the granola until completely coated. Evenly pour the granola onto a baking sheet and lightly press down. Bake for 25-30 minutes or until golden.

Step 3:

Allow the granola to cool completely. Once cooled, break the granola into crumbles and sprinkle in the chocolate chips and dried cherries. To keep fresh, store in a container.
